Karaage chicken is a delicious Japanese dish of juicy bite sized marinated chicken pieces deep fried in a crispy golden coating.
Cooking Style: Deep frying - Camp oven or wok.
Cooking time: 1 hour marinating plus 10 minutes cooking.
Ingredients:
Marinade-
1kg diced chicken (bite sized pieces)
2 tablespoons cooking sake
2 tablespoons soy sauce
2 tablespoons white rice vinegar
2 teaspoons minced ginger
2 teaspoons minced garlic
1 tablespoon oyster sauce
1 tablespoons brown sugar
Coating
1 cup cornflour
1 tablespoon salt
Method:
- Combine all marinade ingredients in a bowl then add chicken, coating well. Refrigerate for 1 hour.
- Combine the coating mix ingredients in a bowl before coating each chicken piece and shaking off excess.
- Fry in hot oil until golden brown and chicken is cooked through.
- Plate up with a drizzle of Kewpie mayonnaise and Sriracha chilli or Hoisin sauce.
Delicious served with a garden salad and/or white rice.
