Ingredients:
2 chicken marylands
1/4 cup lime juice
Dry rub:
1 tablespoon brown sugar
1 tablespoon dried thyme leaves
1 tablespoon ground allspice
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic powder
1 teaspoon cinnamon
1/4 teaspoon cayenne (mild). Increase for more heat.
1 teaspoon ground cumin
Method:
- Combine all dry rub ingredients and mix until well combined.
- Take a sharp knife and make a few shallow slices into the chicken to allow the rub to penetrate the meat more.
- Coat chicken all over with lime juice then coat evenly with the dry rub (shake the chicken and dry rub in a plastic ziplock bag is an easy way to get a good even coating).
- With your Ozpig belly full of hot coals and the char grill oiled up place the chicken on the grill plate (you'll want a medium heat). Allow to cook flipping occasionally until cooked through 20-30 minutes (time will vary depending on how hot your fire is). Place a wok upside down over the chicken to trap heat in and help the chicken to cook evenly.
