Rotisseries aren't just for meat you can cook up a mouthwatering dessert on a rotisserie and they don't come much more mouthwatering than this whole pineapple glazed in bourbon butter and brown sugar. Great served warm with vanilla ice cream.


Cooking Method: Rotisserie

Cooking Time: 20-30 minutes


Ingredients:

1 whole ripe pineapple


Glaze:

3 tablespoons melted butter

a couple good glugs of bourbon

2 teaspoons cinnamon

2 tablespoons brown sugar


Method:

  1. Mix glaze ingredients together until well combined.
  2. Cut top off pineapple and remove the rind and eyes.
  3. Centre the pine apple on the skewer and place over a medium heat.
  4. Baste regularly with the glaze using a basting brush and continue to cook until the pineapple has a golden crust.
  5. Slice and serve warm.
