Whether it's as a beer snack, an appetizer, a side or just a chef's snack if you've never had a Jalapeno popper hit your tongue then you can seriously be assured you're missing out. The great thing is it can be as hot or as mild as you like.....but that's not the best thing, the best thing is that it's wrapped in bacon ...juicy bite sized cheesy morsels wrapped in bacon. It's very simple.
Cooking Method: Smoker
Cooking Time: 20-30 minutes
BBQ rub (use your favourite rub, something with a bit of a mix of sweet and savoury is perfect)
- Slice Jalapenos lengthwise and scoop out the seeds for mild or leave them in for more heat.
- Fill each Jalapeno half with a mix of cream cheese, BBQ rub to taste and a handful of cheddar cheese.
- Top each half with more cheddar cheese then wrap with bacon and secure with a toothpick.
- Smoke indirect at 300f with your favourite wood smoke, something like pecan or apple is perfect, then remove baffle plate and cook with direct heat until bacon is crispy.
This is best cooked in the Ozpig smoker but can also be cooked on the chargrill plate covered by an upside down wok over a gentle heat until bacon is crispy and jalapenos are soft.
