The flavor from the char on the chicken pairs with the creamy peanut sauce to create a watering winning combination. Very quick to cook while entertaining as it can be prepared in advance.

Cooking Method: Char Grill Plate
Cooking Time: 5-10 minutes cooking, 2 hours marinating

Chicken breast cut into 1 inch strips
2 tablespoons soy sauce
2 teaspoons fish sauce
Juice of 2 small limes (roughly 2 tablespoons)
1 tablespoon honey
1 tablespoon sriracha sauce
2 teaspoons ground ginger
2 minced garlic cloves
Satay sauce:
1 cup chicken stock
5 tablespoons smooth peanut butter
1 tablespoon soy sauce
1 tablespoon honey
2 teaspoons fish sauce
2 teaspoons sriracha sauce
2 cloves minced garlic
1 teaspoon curry powder
1 tablespoon lime juice

  1. Mix together all marinade ingredients and coat the chicken well, place in fridge at least 2 hours, tossing chicken through marinade occasionally.
  2. Soak wooden skewers in water for 30 minutes prior to cooking.
  3. In a sauce pan add all satay ingredients except lime juice. Bring to a gentle simmer and stir regularly while simmering for 5 minutes or until sauce is thick and smooth. Stir lime juice in and place on side plate to keep warm.
  4. Thread each chicken strip on to a skewer.
  5. On the hot grill plate, grill chicken sticks for a few minutes each side until chicken is cooked through.
Serve sticks drizzled with satay or with a bowl of the satay dipping sauce
