Quick easy wing it style dinner perfect for lazy days. Measurements don't need to be precise it's designed to be an easy one pan meal.

Cooking Time: 20 minutes
Penne pasta, cooked to directions on packet
100g salami slices, roughly chopped
2 potatoes, finely diced
1 onion, finely diced
2 cloves garlic, finely diced
1 cup white wine
Cherry tomatoes, halved
1 cup fresh basil
- Start by frying off the potatoes in a little olive oil until lightly browned and softened then add garlic and diced onions. Continue cooking until onion are translucent and soft.
- Pour in white wine and simmer gently until mostly evaporated.
- Add salami, cherry tomatoes, basil, a handful of Parmesan and cream.
- Simmer for a couple minutes then stir through cooked penne pasta.
Served topped with Parmesan and some fresh diced chilli.
