Quick easy wing it style dinner perfect for lazy days. Measurements don't need to be precise it's designed to be an easy one pan meal. 

Cooking Style: Camp Oven

Cooking Time: 20 minutes


Ingredients:

Penne pasta, cooked to directions on packet

100g salami slices, roughly chopped

2 potatoes, finely diced

1 onion, finely diced

2 cloves garlic, finely diced

1 cup white wine

200ml cream

Cherry tomatoes, halved

1 cup fresh basil

Parmesan cheese

Olive oil


Method: 

  1. Start by frying off the potatoes in a little olive oil until lightly browned and softened then add garlic and diced onions. Continue cooking until onion are translucent and soft.
  2.  Pour in white wine and simmer gently until mostly evaporated.
  3. Add salami, cherry tomatoes, basil, a handful of Parmesan and cream. 
  4. Simmer for a couple minutes then stir through cooked penne pasta.

 Served topped with Parmesan and some fresh diced chilli.
