One of the first things one learns when they first get a camp oven is a good old Aussie damper. Everybody seems to have their own tried and tested (and often closley guarded secret) damper recipe. This is a great plain damper recipe.
Cooking Style: Camp Oven
Cooking Time: 30-40 minutes
Ingredients:
3 cups s/r flour
couple pinches salt
3 tablespoons softened butter
200ml milk
Method:
- Add SR flour to a bowl and add a few good pinches of salt.
- Rub in butter through the flour with your fingers until it goes like fine crumbs.
- Tip in 200 mls or so of milk and work it all together into a ball, add extra flour or milk until you get a smooth dough that isn't too sticky.
- Put it in a warm camp oven on a trivet, brush on some milk on top of the damper and bake for 30-40 minutes with coals underneath and on top. It is ready when you can slide a skewer into it and it comes out clean.
